SWEET CORN ROASTED IN HUSK WITH CILANTRO BUTTER

4 ounces unsalted butter, softened
1/2 cup cilantro leaves, washed, dried and finely chopped
4 garlic cloves, pressed
Salt and pepper
Soak ears of corn in cold salted water 30 minutes without disturbing husks. Drain. Peel back corn husks, leaving husks attached. Remove silks.
In a bowl, stir together butter, cilantro and garlic until well mixed. Spread Cilantro Butter evenly over corn. Sprinkle with salt and pepper. Pull husks over corn, and twist ends tightly.
Place on grill 4 to 5 inches from heat. Broil turning occasionally until husks are brown (about 20 minutes). Peel back husks and serve.
