Spinach Mashed Potatoes


  • 2 lbs potatoes, peeled and chopped
  • 5 ounces spinach
  • 2 Tbsp butter
  • 1 cup evaporated milk
  • 1 Tbsp minced garlic
  • salt and pepper, to taste


1. Boil potatoes with 1/2 teaspoon salt until soft enough to mash (a fork can easily be poked through them). Strain most of the liquid out, leaving about 1/2 cup in the pot. The potatoes should be steaming hot.

2.Put hot potatoes into a bowl and mash with butter and salt. Use a strong spoon to beat further, adding milk to achieve the consistency you desire.

3. In a pan, heat oil and add garlic. Add the spinach (previously washed and chopped) and saute. Add Spinach to the mashed potatoes.

4. Serve warm.

Preparation time: 30 min. Cooking time: 20 min.
