Wild Rice Hot Dish INSIDE a Pumpkin

First you need to measure the length of space from the shelf on the lowest level to 3 to 4 inches below the broiler element so the pumpkin stem doesn’t get burned. This way you can measure the pumpkin when you get it.

Next you buy 6oz pkg of Uncle Ben’s Wild Rice Original recipe (prepared) 1 lb of ground pork and beef browned together and drained, Sauté 1/2 gr. pepper, 2 stalks celery, 1 med. onion all diced, add 1/2 cup green olives or black, 1 can of sliced water chestnuts drained,1 can of cr. of mushroom or cr. of chicken soup dash of salt and pepper. Combine all and spoon into a medium pumpkin. Put in a baking dish with a small amount of water on the bottom as needed. Bake for approx. 3 hours. Cover the pumpkin with foil if it starts to brown too quickly. When you can feel the pumpkin is softer it should be done. Enjoy. This is from a friend of mine named Carole Leer.

Put the top of the pumpkin back on while baking.
